Welcome to forced deep-throating! I recently received such a gag. Looking at the pictures, I think it's the same model. It's effective at keeping my mouth open. However, the wearer can easily remove it. The rubber wedges are not tall enough to fully wedge open my jaws, even when at the back of mouth. So if I stop biting down and open my mouth just a bit, I can easily push the rubber wedges out with my tongue. It may work better for someone with a smaller mouth and/or range of jaw motion.

I'm not familiar with issues with butterfly gags, I thought the principle was that once it was fully inflated there would be no way for the wearer to remove it (i.e. it expands to a point where removing it would require a dislocated jaw)?

This is not actually what I meant. I was referring to the fact that it manages to slip out of your mouth before being inflated enough to stay inside. It gets bigger than your mouth depth before it's wider than your cheeks can stretch. If there were butterfly gag that was more shaped like a mouth guard, then it might actually stay inside. But this default design will slip past your cheeks without something further holding it in.
