Actually, why bother with arduino? Mount webcam there (cheap chinese fo $5-10), and use software. Qwertybcn121 surely can write something usable.

I saw the "Extreme Hands" videos from MFX Video (if you're not familiar they're the ones who created the "2 Girls 1 Cup" video) and from time to time I would experiment with forcing my fingers down my throat. I was never quite sure which hole I was hitting or how to choose.

Your trachea should be "automatically" closed when something is entering your throat. If not - you might have serious problems in usual life, during, for example, eating.
